After making mini pork cutlets and even rolling them into kimbap, I had some sauce leftover. The sauce I make is a versatile creation that I confidently say is delicious with steak, hamburg steak, and pork cutlets alike! So, this time, I decided to make a Beef Hamburg Steak to create a festive Christmas atmosphere. I usually mix pork and beef for my hamburg steaks, but for the first time, I made it purely with beef. Since it was imported beef and not Korean Hanwoo, I was a little more concerned. I worried it might turn out dry and tough, but there was a surprising twist! It was incredibly tender and melted in my mouth, tasting absolutely divine. I realized that even with imported meat, the cut, the grinding frequency, and the seasoning techniques make all the difference. Even the family members who initially thought beef-only hamburg steak might not be great admitted it was genuinely delicious, bringing a bright smile to my face. Hamburg Steak Ingredients

  • 500g Ground Beef (recommend a cut with a good balance of lean meat and fat for tenderness)
  • 1 Tbsp Cheongju (Rice Wine – to remove any gamey odor)
  • 2 Tbsp Mirin (for enhanced flavor and tenderizing)
  • 1 tsp Salt (adjust to taste)
  • Pinch of Black Pepper (freshly ground pepper works best)
  • 1 tsp Minced Garlic (adds depth of flavor)
  • Sliced Cheese (optional, to taste)
  • 1 Egg (for the patty mixture)
  • 3 Tbsp Egg Wash (for coating)
  • 4 Tbsp Breadcrumbs (absorbs moisture and adjusts texture)
  • Pinch of Parsley Flakes (for color and aroma)

Special Hamburg Steak Sauce

  • Homemade Pork Cutlet Sauce (or store-bought sauce can be used)

Cooking Instructions

Step 1

In a deep bowl, combine the ground beef with 1 Tbsp Cheongju, 2 Tbsp Mirin, 1 tsp Salt, a pinch of Black Pepper, and 1 tsp Minced Garlic. Gently knead the mixture with your hands until the seasonings are well incorporated and the meat becomes slightly sticky. This helps the patty hold its shape.

Finely dice the onion. Avoid large chunks for a smoother texture. Heat a little oil in a pan over medium-low heat and sauté the diced onion until translucent. Allow the sautéed onion to cool completely before adding it to the meat mixture. Adding hot onion can prematurely cook the meat.

To the seasoned ground beef, add the completely cooled sautéed onion, 1 Egg, 4 Tbsp Breadcrumbs, and 2 Tbsp Milk. Knead again until well combined and a sticky dough forms. This ensures the hamburg steak patties are tender and hold together nicely. Finally, stir in a pinch of Parsley Flakes for added aroma.

Divide the meat mixture into portions and shape them into round, flat patties, about 1.5-2 cm thick. Lightly press the center of each patty to prevent it from puffing up excessively during cooking. Once shaped, coat each patty evenly with the egg wash.

Heat a generous amount of oil in a pan over medium-low heat. Place the coated patties in the pan and sear until golden brown on both sides, about 4-5 minutes per side. Reduce the heat to low, cover the pan, and cook for an additional 5-7 minutes, or until the patties are cooked through. Adjust cooking time as needed for thicker patties to ensure they are cooked internally. Place a slice of cheese on top of each patty during the last minute of cooking to let it melt.

Arrange the cooked hamburg steaks on a serving plate. Generously spoon the warm homemade pork cutlet sauce (or store-bought sauce) over the patties.
