Ingredients- 60g Coconut flour
- 110g Coconut oil (softened at room temperature)
- 56g Ghirardelli 100% Cacao Baking Bar, finely chopped
- 1 Large egg
- 60g Monk fruit sweetener
- Less than 1g Himalayan pink salt (a pinch)
- 1/2 teaspoon Baking soda
Cooking Instructions
Step 1
In a mixing bowl, combine all the prepared ingredients: coconut flour, softened coconut oil, finely chopped 100% cacao baking bar, egg, monk fruit sweetener, Himalayan pink salt, and baking soda. Stir with a spatula or whisk until well combined and no dry pockets remain. If your coconut oil is firm, you can gently warm it in the microwave for 10-20 seconds to liquefy it slightly, making it easier to mix.
Step 2
There’s no need to chill the dough. Take portions of the dough (about a tablespoon each) and shape them into round cookies, about 1.5 cm thick, using your hands or the back of a spoon. Place the shaped cookies on parchment paper in your air fryer basket. Air fry at 160°C (320°F) for approximately 9 minutes. Cooking times may vary depending on your air fryer model, so keep an eye on them.
Step 3
Be very careful when removing the cookies from the air fryer, as they will be hot and delicate. Carefully transfer the cookies to a wire rack to cool completely. Let them cool for about 10 minutes initially, then carefully remove the parchment paper from underneath. Continue cooling for at least another 20 minutes (totaling 30+ minutes) to ensure they become fully crisp. This resting period is crucial for achieving a perfect texture.
