Step 1

We’re going to make wonderfully chewy Pave-style Nama chocolate using the ‘Pave Chocolate Making Kit’ from B&C Market (also known as Bread Garden). This kit is fantastic because it even includes a beautiful tray to present your finished chocolates, making them feel extra special. 🙂

Step 2

The back of the product packaging provides clear, step-by-step instructions. They are so detailed and friendly that even absolute beginners can easily follow along and create delicious homemade chocolate.

One of the best things about this kit is that you don’t need to gather any extra ingredients—it comes with everything, from the dark couverture chocolate to the specialized pave tray! It truly has all the advantages. The only thing you need to prepare is 50ml of fresh milk!

The kit also includes matcha powder and cocoa powder for adding lovely flavors, as well as vegetable cream to ensure a smooth, melt-in-your-mouth texture. How thoughtful! Step 5

First, measure out approximately 40-50ml of milk. I used 50ml for this recipe. If you use 40ml, the chocolate might set a bit firmer and fill the pave tray more precisely. Based on my experience, using 50ml left a slight bit of space in the tray, which gave the chocolates a lovely proportion. 🙂

Step 6

In a microwave-safe bowl, combine the 10g of vegetable cream from the kit with the 50ml of milk you prepared. Stir them together thoroughly until no powder is visible and the mixture is smooth.

Step 7

Next, add all the dark couverture chocolate from the kit to the bowl. Microwave on high for about 30 seconds to 1 minute, stirring halfway through, until the chocolate is completely melted and smooth. I microwaved mine for 50 seconds. Be careful not to overheat the chocolate!

Step 8

Ah, the wonderful aroma of rich chocolate is filling the air! Stir the melted chocolate gently with a spatula, ensuring it’s evenly mixed and lump-free. This step helps develop the chocolate’s exquisite flavor.

Step 9

Line the bottom of your pave chocolate tray with plastic wrap. Carefully pour the well-melted chocolate mixture into the tray, filling it almost to the brim. To get a perfectly flat surface, gently tap the tray on the counter 2-3 times to release any air bubbles. The instructions suggest chilling for 30 minutes to 1 hour, but I found that after an hour in the fridge, the bottom was still a bit soft. For a firmer set, I recommend an additional 20-30 minutes in the freezer.

Step 10

Once the Nama chocolate has set firmly, carefully lift it out of the tray using the plastic wrap. Then, cut it into your desired bite-sized pieces. You’ll notice how wonderfully chewy and dense it is as you cut – quite different from regular chocolate! Get ready to enjoy this unique texture.

Step 11

Now for the finishing touch! Using a sieve, generously dust your cut Nama chocolate pieces with matcha powder or cocoa powder, according to your preference. This step adds a professional, elegant look. Don’t be shy with the dusting – it’s key to that signature Pave Chocolate appearance! (I really sprinkled a lot! Hahaha)

Step 12

Take a look at the side profile of your finished Pave Nama chocolate. Doesn’t it look incredibly chewy and decadent? You can almost feel that rich texture just by looking at the photo! ^^

Arrange your beautifully crafted Pave Nama chocolates back into the original tray. Since the chocolates are quite generously sized, they might not fit perfectly flush. You might need to slightly tilt them to fit them in snugly. This just shows how substantial and satisfying they are! 🙂
