Curry Rice Ingredients

  • 100g Curry Powder (choose your favorite flavor)
  • 200g Minced Pork (can be substituted with beef or chicken)
  • 1/2 Onion (finely chopped)
  • 1/2 Potato (diced into small cubes)
  • 1/3 Carrot (diced into small cubes)
  • 6 Eggs
  • 4 cups Water (approx. 800ml)
  • 3 bowls Warm Cooked Rice
  • A little Cooking Oil (for frying eggs)

Egg Mixture Seasoning for a Soft Egg Cover

  • 1/2 cup Milk (approx. 100ml, adds tenderness)
  • 1 Tbsp Cooking Wine (to remove egg odor)
  • 1/4 tsp Salt
  • A pinch of Black Pepper

Cooking Instructions

First, let’s prepare the vegetable ingredients for the curry rice. Finely chop the onion, and dice the potato and carrot into slightly smaller than bite-sized cubes. This preparation helps the vegetables blend well with the curry and speeds up the cooking time.

Now it’s time to make the egg cover, the heart of a soft omelet rice. Crack 6 eggs into a bowl. Add the prepared egg mixture seasoning (1/2 cup milk, 1 Tbsp cooking wine, 1/4 tsp salt, a pinch of black pepper) and gently mix with a spatula or chopsticks until combined, without creating too much foam. Set aside.

Heat a little cooking oil in a deep pot over medium heat. Add the chopped onion and sauté for about 3 minutes until translucent, bringing out its sweetness. Then, add the diced potatoes and carrots and sauté for another 2 minutes. Add the minced pork, sprinkle with a little salt and pepper, and stir-fry until the meat turns white and is cooked through.

Once the meat and vegetables are well stir-fried, pour in 4 cups of water and bring to a boil over high heat. As the water starts to boil, carefully skim off any foam or impurities that rise to the surface. This step ensures a clean and delicious curry broth.

Now it’s time to add the curry powder. Reduce the heat to low. Gradually add 100g of curry powder, stirring well to dissolve any lumps. Continue to stir and cook for about 5 minutes until it reaches your desired thickness. If it becomes too thick, you can add a little more water.

It’s time to make the impressive omelet topping. Heat a medium-sized non-stick pan over medium-low heat and lightly coat with cooking oil. Pour in the prepared egg mixture, gently tilting the pan to spread it thinly and evenly. As the edges of the egg start to set, carefully tilt the pan and fold the egg in half to create a soft, semi-cooked omelet. The key is not to overcook it.

Finally, it’s time for plating. Shape 3 bowls of warm rice into a round mound in the center of a plate. Carefully place the freshly made soft omelet on top of the rice.
