I absolutely adore tofu dishes for their rich soy protein content. While simply pan-frying tofu and dipping it in soy sauce is delicious, coating it with curry powder before frying adds a delightful twist with its subtle curry aroma and vibrant yellow hue, making it incredibly addictive. This recipe is so straightforward that even beginners can easily whip it up, creating a wonderful side dish from a single block of tofu.

Ingredients
  • 1 block firm tofu (approx. 300-350g)
  • 1.5 Tbsp curry powder (can increase to 2 Tbsp, to taste)
  • 1 Tbsp pancake mix (or all-purpose flour)
  • 2-3 eggs
  • Pinch of dried parsley (optional)
  • Chopped green chili or scallions for garnish

Cooking Instructions

Step 1

First, slice the tofu into approximately 1cm thick pieces. Slicing them too thinly might cause them to break apart during cooking, so maintaining a moderate thickness is key.

Step 2

Gently press the sliced tofu with paper towels to remove excess water. This step is crucial to prevent oil splattering when frying and helps the tofu achieve a crispier texture. You can lightly sprinkle salt for seasoning, but since curry powder has some saltiness and we’ll add a pinch to the egg wash, it’s perfectly fine to skip this.

Step 3

Now, let’s prepare the coating. In a wide dish, combine 1 Tbsp of pancake mix and 1.5 Tbsp of curry powder, mixing them thoroughly. If you enjoy a stronger curry flavor, feel free to increase the curry powder to 2 Tbsp. Experimenting with different curry powders can also yield varied flavor profiles.

Step 4

In a separate bowl, crack 2-3 eggs. Add a pinch of salt and a bit of dried parsley. The parsley is optional but adds a nice touch of color and aroma. Whisk the eggs gently with a fork or whisk until smooth.

Step 5

Coat the water-drained tofu pieces evenly in the curry powder and pancake mix mixture. Lightly press the pieces to ensure the coating adheres well.

Dip the coated tofu pieces into the prepared egg wash, ensuring both sides are well-covered. The egg wash helps the coating stick and adds a lovely richness.

Step 7

Heat a generous amount of oil in a pan over medium heat. Once the oil is hot, carefully place the egg-coated tofu pieces into the pan and fry them until golden brown on both sides. Cooking over medium heat, rather than high heat, ensures the tofu cooks through without burning.

Continue frying until both sides are a beautiful golden brown. These curried tofu fritters are ready! You’ll enjoy the contrast between the crispy exterior and the soft, tender interior.

Arrange the finished curried tofu fritters on a plate. Garnish with finely chopped scallions or green chilies.
