  • 1/4 tsp sugar (for marinating beef)

Soybean Sprouts Pot Rice Sauce

  • A little chopped wild chives or green onions (optional)
  • 2 Tbsp soy sauce
  • 1 Tbsp plum extract (maesilcheong)
  • 1 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds
  • Pinch of black pepper

The key to great soybean sprouts pot rice is fresh, crunchy sprouts. Wash the soybean sprouts thoroughly under running water. To remove any raw smell and ensure crispiness, place the sprouts in a pot with just enough water to cover them. Add a pinch of salt (about 1/4 tsp) and cook uncovered over medium-high heat for about 3-5 minutes, just until they are slightly tender but still crisp. Be careful not to overcook them. Drain the blanched sprouts in a colander.

Now, let’s prepare the flavorful ground beef. In a bowl, combine the ground beef, minced garlic, soy sauce, sesame oil, and sugar. Mix well with your hands to marinate. Heat a pan over medium heat. Cover with a lid and let it steam on low heat for 5-7 minutes. During this steaming process, the juices from the sprouts and beef will infuse into the rice, adding wonderful flavor.
