Main Ingredients- 3 Oiji (Korean Pickled Cucumbers)
- 2 segments of green onion (about the width of two fingers)
Seasoning- 1.5 Tbsp Sesame Oil
- 1 Tbsp Sesame Seeds
- 1 Tbsp Gochugaru (Korean Chili Flakes)
- Plum Extract (adjust according to the saltiness of the Oiji)
- 1.5 Tbsp Sesame Oil
- 1 Tbsp Sesame Seeds
- 1 Tbsp Gochugaru (Korean Chili Flakes)
- Plum Extract (adjust according to the saltiness of the Oiji)
Cooking Instructions
Step 1
First, prepare the Oiji, which is the foundation for a crunchy and delicious Oiji Muchim. If you are using store-bought Oiji, it can be quite salty, so it’s recommended to soak it in cold water for about 10-20 minutes to lightly reduce the saltiness.
Step 2
Slice the Oiji into bite-sized pieces (about 0.5 cm thick). Rinse the sliced Oiji lightly in cold water and drain well. It’s crucial to remove as much water as possible at this stage. Press the Oiji firmly with paper towels to squeeze out excess moisture. This prevents the dish from becoming watery and allows the seasoning to penetrate better, resulting in a tastier dish.
Step 3
Place the drained Oiji into a mixing bowl. Now it’s time to add the delicious seasonings.
Step 4
To the bowl with the Oiji, add gochugaru, sesame seeds (you can also use crushed sesame seeds for an extra nutty flavor), and sesame oil. Depending on how salty your Oiji is, you can add plum extract or sugar to adjust the sweetness and enhance the overall flavor. Once all ingredients are added, gently mix everything together with your hands. Be careful not to mix too vigorously, as this can make the Oiji mushy.
Step 5
Voila! Your appetizing Oiji Muchim is ready. Isn’t it amazing how such a simple side dish can look so appealing? Served with a bowl of white rice, this is a true ‘rice thief’ that will have you finishing your meal in no time! This golden recipe for Oiji Muchim is incredibly easy and always a success. Sesame oil, gochugaru, sesame seeds, and green onion are staples in our recipes! This combination is key to our versatile seasoning base. When seasoning pickled ingredients like Oiji or danmuji, use sugar or plum extract for sweetness, and for bean sprouts, use salt – these are fundamental seasoning principles!
Step 6
Finally, sprinkle a little more sesame seeds on top for an extra nutty aroma and a beautiful presentation. This small touch will further elevate the flavor.
Step 7
And there you have it – a perfectly crunchy and delicious Oiji Muchim. It’s wonderful to enjoy immediately, or you can refrigerate it for the flavors to meld even further.
