On sweltering hot days when even the air conditioner can’t fully combat the heat, I wanted to prepare dinner without using the stove. So, I made this simple and refreshing cold cucumber salad with imitation crab, using ingredients I already had in the fridge. The crisp cucumber, tender imitation crab, and colorful bell peppers come together to create a dish that’s as beautiful as it is delicious. It’s perfect for when you don’t have much appetite and also makes a great side dish.

Refreshing Cold Dressing

  • Mild mustard paste 0.5 Tbsp
  • Vinegar 2 Tbsp
  • Soy sauce 0.6 Tbsp
  • Sugar 1 Tbsp

Cooking Instructions

Wash the cucumber thoroughly. Rub its skin gently with coarse salt to remove any residue, then rinse under running water. Slice it diagonally about 3mm thick, and then julienne it into strips of the same thickness. This preparation helps maintain the cucumber’s crisp texture.
