Crunchy & Flavorful! Yang Se-hyung’s Carrot Kimbap Recipe
Recreate the Delicious Carrot Kimbap from the TV Show ‘Delicious Rendezvous’ Recommended by Yang Se-hyung
I tried making the Carrot Kimbap featured on the popular TV show ‘Delicious Rendezvous,’ recommended by Yang Se-hyung! While the previous Cabbage Kimchi Kimbap was also fantastic, this Carrot Kimbap is even simpler to make with its minimal ingredients, and it turned out to be just as delicious. Here’s Yang Se-hyung’s second kimbap recipe, the wonderful Carrot Kimbap!
Main Ingredients
- 1 Carrot
- 100g Aged Cabbage Kimchi
- Kimbap rice for 2 rolls
- 2 sheets of Kimbap seaweed
- 1 Tbsp minced garlic
- Sesame oil (for frying)
- Salt (to taste)
Seasoning for Cabbage Kimchi (Pickled)
- 1 Tbsp Soy sauce
- 1 Tbsp Vinegar
- 0.5 Tbsp Brown sugar
Seasoning for Rice
- 1 Tbsp Sesame oil
- Salt (to taste)
- Sesame seeds (to taste)
- 1 Tbsp Soy sauce
- 1 Tbsp Vinegar
- 0.5 Tbsp Brown sugar

Cooking Instructions
Step 1
First, prepare all the ingredients for your kimbap. Slightly aged or fermented cabbage kimchi often has a richer flavor and works wonderfully in this recipe.
Step 2
Julienne the carrot into strips that are neither too thin nor too thick, ensuring a consistent size for a pleasant bite in the kimbap.
Step 3
Heat a little cooking oil in a pan over medium heat. Add the minced garlic and sauté until fragrant. Then, add the julienned carrots and a pinch of salt. Stir-fry until the carrots are tender-crisp and slightly sweet. Be careful not to overcook them; they should retain some crunch.
Step 4
For the cabbage kimchi, rinse it gently under running water to remove excess seasoning, especially if it’s very salty. Squeeze out as much water as possible with your hands. Then, cut the cabbage kimchi into roughly three equal pieces so it’s easier to incorporate into the kimbap.
Step 5
In a small bowl, combine the prepared cabbage kimchi with the soy sauce, vinegar, and brown sugar in the specified amounts.
Step 6
Gently mix everything together with your hands. This process creates a quick pickled cabbage kimchi that is tangy and slightly sweet, balancing the flavors in the kimbap.

The stars of this simple kimbap are the pickled cabbage kimchi and the stir-fried carrots – just these two main fillings!
Step 8
While the rice is still warm, season it with sesame oil, sesame seeds, and salt. Mix thoroughly with a rice paddle or spoon until evenly combined. Seasoning the warm rice helps the flavors meld better.
Step 9
Lay a sheet of kimbap seaweed on a bamboo rolling mat. Spread a thin, even layer of the seasoned rice over the seaweed, leaving a small border at the top. Place the pickled cabbage kimchi and stir-fried carrots along the bottom edge of the rice. Then, carefully roll the kimbap tightly using the mat. This completes your Carrot Kimbap!

Once rolled, brush the outside of the kimbap with a little sesame oil for a glossy finish. Slice the kimbap into bite-sized pieces, and it’s ready to be enjoyed. So easy!

Even though it uses only two main fillings, this simple kimbap has a surprisingly captivating flavor. The refreshing tang of the pickled cabbage kimchi beautifully complements the natural sweetness of the carrots.
