Hello everyone! Today, we’ll be making a delicious and crunchy chives and cucumber kimchi salad together. It will be the perfect side dish to whet your appetite this summer.

First, wash the cucumbers thoroughly. Gently rubbing them with coarse salt will make them even cleaner. Rinse them under running water and pat dry. Then, make deep cross-shaped cuts into the cucumber, going about two-thirds of the way down, being careful not to cut all the way to the end.

Now it’s time to brine the cucumbers. In a pot, combine 500ml of water and 4 Tbsp of coarse salt and bring to a boil over high heat. Once the salt is completely dissolved and the water is boiling, turn off the heat. Immediately place the cut cucumbers into the hot saltwater. Press them down to ensure they are submerged and let them brine for 10 to 15 minutes. The cucumbers should become slightly softened. Remove the brined cucumbers and drain any excess water.

Let’s make the delicious seasoning for the cucumber kimchi! First, make a flour paste by mixing 2 Tbsp of flour with 1 cup of water and simmering it over low heat, stirring constantly until it thickens. Let it cool. Finely chop 1/2 onion, and wash and cut 2 handfuls of chives into 3-4cm lengths. In a large bowl, combine the chopped onion, chives, 1/3 cup fish sauce, 3 Tbsp gochugaru, 2 Tbsp sugar, 1 tsp minced garlic, and the cooled flour paste. Mix everything well to create the savory cucumber kimchi seasoning. We’ve referenced Chef Baek Jong Won’s golden ratio for this!

Now, carefully fill the cuts in the brined cucumbers with the delicious seasoning you’ve prepared. Gently spread open the cuts with your fingers and fill them evenly with the seasoning. Try not to overstuff them, ensuring a moderate amount of filling.
