Main Ingredients
- 1 bag bean sprouts (approx. 300g)
- 1 bunch chives (approx. 50g)
- Small piece of carrot (approx. 30g)
Seasoning
- 1.5 Tbsp red pepper flakes
- 1 tsp salt (or 1/2 Tbsp soup soy sauce)
- 1 Tbsp sesame oil
- 1 Tbsp crushed sesame seeds

Cooking Instructions
Step 1
Prepare all ingredients. Rinse the bean sprouts thoroughly under running water and drain them. Wash the chives and carrot under running water as well.
Step 2
Cut the washed chives into bite-sized pieces, about 3-4 cm long. Thinly julienne the carrot. This preparation helps the seasoning to be evenly distributed, enhancing the flavor.
Step 3
Bring a pot of water to a boil. Once boiling, add the rinsed bean sprouts and cover the pot. Boil for about 2-3 minutes. Be careful not to overcook the bean sprouts, as they will lose their crispness. Reserve the bean sprout cooking water; it can be used later as a stock for soups or stews.
Step 4
In a large bowl, combine the blanched bean sprouts with the prepared chives and julienned carrots. Add all the seasoning ingredients: red pepper flakes, salt, sesame oil, and crushed sesame seeds. You can also add a little soup soy sauce to taste if desired.

Gently mix all the ingredients and seasonings together with your hands. Toss lightly to avoid mashing the bean sprouts or chives. Ensure the seasoning is evenly coated on all ingredients.
