Ingredients

  • Pickled Cucumbers (Oi-Jangajji) 2
  • Gochugaru (Korean Chili Flakes) 1 tsp
  • Plum Extract (Maesil Extract) 1 tsp
  • Sesame Oil 1 Tbsp
  • Minced Garlic 1 Tbsp
  • Chopped Scallions 1 Tbsp
  • Red or Green Chili, thinly sliced 1/3 (optional)
  • Sesame Seeds 1 Tbsp

Cooking Instructions

Step 1

First, prepare the two pickled cucumbers (Oi-Jangajji). Slice them thinly into coin shapes, about 0.5 cm thick. Slicing them thin ensures they absorb the seasoning well.

Place the sliced pickled cucumbers in cold water for about 5 minutes. This helps to remove some of the excess saltiness. Be careful not to soak them for too long, as this can make them lose their crispness.

Prepare the additional ingredients for the salad. Have 1 Tbsp of minced garlic, 1 Tbsp of chopped scallions, and 1/3 of a chili pepper, thinly sliced, ready. Adding chili adds color and a subtle hint of spice if desired.

This is the most crucial step for achieving that signature crunchy texture! After briefly soaking, take the pickled cucumbers out of the water and squeeze them firmly with both hands. You want to remove as much moisture as possible – really give it your all to get them as dry as you can!

Now, it’s time to mix everything together. To the well-squeezed pickled cucumbers, add the minced garlic, chopped scallions, gochugaru, and plum extract. Gently mix and toss everything together. Finally, for a nutty aroma, drizzle in 1 Tbsp of sesame oil and sprinkle with sesame seeds. Give it one last gentle toss to combine. Your delicious Oi-Jangajji salad is ready!
