First, prepare the bean sprouts. Rinse them thoroughly under running water. Removing any roots or blemishes will result in a cleaner final dish.

Next, prepare the wild chives. Trim the root ends, clean off any soil, and wash them several times under running water. As they are delicate, handle them gently.
