Super Simple One-Bowl Meal: Delicious Radish Kimchi Fried Rice
My refrigerator is well-stocked with delicious radish kimchi, generously sent by my in-laws and parents! My husband especially loves it, so we often receive it. While this crunchy and flavorful kimchi is delicious eaten simply with rice, it’s also fantastic transformed into a fried rice! It’s an incredibly easy and convenient meal for weekends, requiring no side dishes.
Ingredients- 5 radish kimchi (chopped)
- 4 strips bacon (cut lengthwise)
- 1/2 cup green onion (chopped)
- 1 Tbsp canola oil

Step 1
First, cut the bacon into long, bite-sized strips. This ensures it’s evenly distributed in the fried rice and provides a satisfying texture.

Prepare the delicious, well-fermented radish kimchi from my mother! The taste of the kimchi is crucial for the fried rice’s flavor, so using good quality kimchi is key!
Step 3
Chop the radish kimchi, including the core, into small, round pieces. Avoid chopping it too finely, as this can reduce the texture; aim for a moderate size.

Heat a large pan over medium heat, then add the sliced bacon and cook until golden brown and rendered. The fat from the bacon will add rich flavor to the fried rice.

Once the bacon is partially cooked, add the chopped green onions and 1 Tbsp of canola oil. Stir-fry until the aroma of the green onions is fragrant. Sautéing the green onions adds a wonderful fragrance and enhances the fried rice’s taste.

Now, add the chopped radish kimchi and 1/2 cup of kimchi juice. Stir-fry everything together. The kimchi juice will add moisture and a deep, savory flavor to the fried rice.

For seasoning, add 1/2 Tbsp sugar and 1 Tbsp soy sauce. If making this for adults, you can add 1/2 Tbsp gochujang for a bit of spiciness. If preparing for children, omit or reduce the gochujang.

Stir-fry over medium-low heat for about 2 minutes, allowing the flavors to meld together. Ensure the kimchi’s sour and sweet notes are balanced.

Finally, add 2 bowls of cooked rice. Using a spatula, gently break up the rice and stir-fry, ensuring the kimchi, bacon, and seasonings are evenly distributed. It’s important to stir-fry thoroughly so the rice grains absorb all the flavors.

Just before turning off the heat, drizzle in 2 Tbsp of perilla oil for a nutty aroma and sprinkle with sesame seeds. Give it a final mix. Taste and adjust seasoning if needed, adding a little more soy sauce to suit your preference.
