Vibrant Yellow Zucchini Stir-fry Made with Salted Shrimp
This is a visually appealing stir-fry made with bright yellow zucchini. Compared to green zucchini, the skin of the yellow variety is wonderfully crisp. Using salted shrimp for seasoning results in a clean and delicious flavor. It’s a simple dish that makes a great side for rice or even a light snack with drinks.
Ingredients- 1 Yellow Zucchini
- 1 clove Garlic
- 1/4 Red Onion
- 2 stalks Scallions
- 1 tsp Salted Shrimp Paste (Saewoojeot)
- 1 tsp Toasted Sesame Seeds
- A little Canola Oil
Cooking Instructions
Step 1
First, wash all the vegetables thoroughly. For the yellow zucchini, make sure to clean the surface meticulously.
Step 2
Slice the yellow zucchini into rounds about 0.4 cm thick, then cut each round in half to create half-moon shapes. Cut the scallions into approximately 1 cm lengths, and chop the red onion into bite-sized pieces. Mince the garlic.
Step 3
Heat a little canola oil in a large wok or frying pan over medium-high heat. Add the prepared yellow zucchini and begin to stir-fry until it becomes slightly translucent.
Step 4
Once the zucchini is somewhat cooked, add the sliced red onion and stir-fry together. The sweetness and aroma of the red onion will enhance the flavor.
Step 5
When the zucchini and red onion are about halfway translucent, push the vegetables to one side of the pan. In the empty space, add the minced garlic and salted shrimp paste.

Stir-fry the salted shrimp paste and minced garlic briefly in the hot pan. This helps to release the garlic’s fragrance and mellow the saltiness of the shrimp paste. Be careful not to burn them.

After stir-frying the garlic and shrimp paste, mix all the ingredients in the pan and stir-fry evenly. Since salted shrimp is used for seasoning, adjust the amount according to your preference. Stir-frying with salted shrimp will quickly soften the zucchini.

Finally, add the chopped scallions and stir-fry quickly over high heat for just a moment. It’s important to preserve the fresh aroma and color of the scallions.

Turn off the heat and sprinkle toasted sesame seeds over the stir-fry. The nutty flavor of the sesame seeds adds to the dish’s overall appeal.
