Key Ingredients- 10 frozen shrimp
- 2 eggs
- 3 pinches of salt
- 3 shakes of black pepper (to taste)
- 1 Tbsp all-purpose flour (or tempura flour)
- 2 Tbsp cooking oil
Cooking Instructions
Step 1
Place the frozen shrimp in a bowl and cover with cold water. Gently swirl with your hands to thaw the shrimp while rinsing them. Once thawed, drain any excess water thoroughly.
Step 2
On the back of each thawed shrimp, make a deep cut along the second segment with a knife. This helps the shrimp to spread out beautifully and cook evenly.
Step 3
Using the cut you just made, carefully remove the shrimp’s digestive tract with a toothpick or the tip of a knife. Removing the dark vein results in a cleaner, more delicate taste.
Step 4
Peel off the shells from the shrimp, leaving only the tail intact. The tail provides a convenient handle for eating.
Step 5
Season the prepared shrimp with 3 pinches of salt and a few shakes of black pepper. This light seasoning enhances the shrimp’s natural flavor without overpowering it.
Step 6
Sprinkle 1 tablespoon of all-purpose flour evenly over the seasoned shrimp. Gently shake or toss the shrimp to ensure the flour coats them lightly.
Step 7
In a separate bowl, crack 2 eggs and whisk them gently with a fork or whisk until smooth. Avoid creating too much foam. Removing the chalazae (the white stringy bits) will result in a smoother egg coating.
Step 8
Dip the flour-coated shrimp into the beaten egg mixture, ensuring they are evenly coated. Let any excess egg drip off.
Step 9
Heat 2 tablespoons of cooking oil in a non-stick pan over medium-low heat. Once the oil is shimmering, carefully place the egg-coated shrimp into the pan, ensuring the cut side (the back) faces down.
Step 10
Fry for about 2-3 minutes until the bottom side is golden brown and crispy. Gently flip the shrimp and cook the other side until golden and cooked through. Continue to flip as needed for even browning.
Step 11
These delicious whole shrimp fritters are seasoned to perfection and can be enjoyed as is, without any sauce. However, you can also serve them with soy sauce or chili sauce if you prefer. Enjoy them hot for the best crispy texture!
