On rainy days, there’s something undeniably comforting about indulging in fried foods. While deep-frying at home can be a hassle with oil management and cleanup, these vegetable fritters are designed for simplicity! Main Ingredients- 1/4 small pumpkin (kabocha squash)
- 1 onion
- 1/2 carrot
- 2 potatoes

Step 1
Prepare all your vegetables by peeling them and rinsing them thoroughly under running water.

Begin by julienning the vegetables. Slice the onion into strips no thicker than 0.5cm. Cut the potatoes and carrots into uniform strips, approximately 0.5cm by 0.5cm thick. Slice the pumpkin into similar 0.5cm thick pieces. Cutting the vegetables to a consistent size will ensure they cook evenly.
Step 3
Once all the vegetables are julienned, place them into separate bowls. This makes it easier to mix them with the batter later.

In a large bowl, combine all the julienned vegetables. First, add the tempura flour and toss gently to coat the vegetables. Then, gradually pour in the water while mixing. Wearing disposable gloves makes it easy to thoroughly coat each vegetable strand with the batter. Aim for a thick batter consistency that clings well to the vegetables, not too watery.

Heat a moderate amount of oil in a pan over medium heat. Spoon portions of the vegetable and batter mixture into the hot oil. Ensure the batter is thick enough so the vegetables stick together; if it’s too thin, they might separate. You can shape them loosely into small patties as they cook.

After about 1-2 minutes, when the underside is golden brown, carefully flip the fritters to cook the other side. If the oil level seems low or you notice them browning too quickly, add about 1/2 to 1 tablespoon of oil at a time to ensure even cooking and prevent burning.
