- 1 Tbsp Sugar
- 2-3 Tbsp Oligodang (corn syrup) (adjust to taste)
- 3 Tbsp Water
- Pinch of Black Pepper
- 3 Tbsp Ketchup
- 1/2 Tbsp Gochujang (Korean chili paste)
- 1/2 Tbsp Minced Garlic
- 1 Tbsp Soy Sauce
- 1 Tbsp Sugar
- 2-3 Tbsp Oligodang (corn syrup) (adjust to taste)
- 3 Tbsp Water
- Pinch of Black Pepper
Cooking Instructions
Step 1
First, cut one block of firm tofu into 16 bite-sized pieces. Lightly sprinkle salt on the surface of the cut tofu to season it. This helps remove any unwanted odors and seasons the tofu, making it tastier.
Step 2
Let the salted tofu sit for about 5 minutes to allow excess water to naturally drain out. Then, place kitchen towels both above and below the tofu pieces. Press down firmly with your hands or a tool to squeeze out as much moisture as possible. This step is crucial for achieving a crispy texture when frying.
Step 3
Spread about 2 generous tablespoons of potato starch on a plate. Add the drained tofu pieces and gently shake or toss them to ensure an even coating of starch on all sides. This coating will help the tofu become crispy when fried.
Step 4
Now it’s time to fry the tofu. Pour about 5 tablespoons of cooking oil into a frying pan and preheat over medium heat. Carefully place the starch-coated tofu pieces into the hot oil, making sure to leave some space between them. This prevents them from sticking together before the starch sets and ensures even frying.
Step 5
Fry the tofu, turning it occasionally, until all sides are golden brown and crispy. Continue to flip and fry until each piece achieves a beautiful, appetizing golden color.
Step 6
Once fried to perfection, transfer the crispy tofu to a plate lined with paper towels to drain off any excess oil. This helps maintain the delightful crispiness of the gangjeong.
Step 7
While the tofu is frying, let’s prepare the delicious sauce. In a bowl, combine 3 Tbsp ketchup, 1/2 Tbsp gochujang, 1/2 Tbsp minced garlic, 1 Tbsp soy sauce, 1 Tbsp sugar, 2-3 Tbsp oligodang (adjust sweetness to your preference), and 3 Tbsp water. Mix everything well. Pour this mixture into a saucepan or the frying pan (after draining most of the oil) and start cooking over medium heat, stirring constantly.
Step 8
Once the sauce begins to bubble and thicken, indicating that all the ingredients are well combined, continue to simmer for another 30 seconds to reach the desired consistency. Just before turning off the heat, add a pinch of black pepper for extra flavor.
Step 9
Finally, add the crispy fried tofu to the prepared sauce. Toss gently to coat each piece evenly with the sweet and tangy sauce. Your delicious Tofu Gangjeong with a sweet and spicy fried chicken flavor is now complete! Enjoy it warm for the best taste.
