Main Ingredients- 1 medium-sized fresh potato
- 3 strips of thick-cut bacon
- 1/2 sweet onion
- 2 fresh eggs
- 1 pinch of fine salt
- 1 pinch of black pepper
- 3 Tbsp starch (corn or potato)

Step 1
First, peel the potato thoroughly and then cut it into very thin julienne strips. Soak the julienned potatoes in cold water for about 5 minutes to remove excess starch. This step is crucial for achieving a crispy Rosti. Drain them well in a colander, ensuring all water is removed.

Cut the bacon into bite-sized pieces, either in half or thirds. This ensures even cooking and a pleasant texture when combined with the potatoes.

Finely julienne the onion. The sweetness of the onion will enhance the overall flavor of the Rosti.

Prepare fried eggs to serve on top of the Rosti. Cook them to your preference, either sunny-side up or over easy. Breaking the yolk and mixing it in is absolutely delicious!
