Main Ingredients

  • 1 medium-sized fresh potato
  • 3 strips of thick-cut bacon
  • 1/2 sweet onion
  • 2 fresh eggs
  • 1 pinch of fine salt
  • 1 pinch of black pepper
  • 3 Tbsp starch (corn or potato)

Cooking Instructions

Step 1

First, peel the potato thoroughly and then cut it into very thin julienne strips. Soak the julienned potatoes in cold water for about 5 minutes to remove excess starch. This step is crucial for achieving a crispy Rosti. Drain them well in a colander, ensuring all water is removed.

Step 1

Step 2

Cut the bacon into bite-sized pieces, either in half or thirds. This ensures even cooking and a pleasant texture when combined with the potatoes.

Step 2

Step 3

Finely julienne the onion. The sweetness of the onion will enhance the overall flavor of the Rosti.

Step 3

Step 4

Prepare fried eggs to serve on top of the Rosti. Cook them to your preference, either sunny-side up or over easy. Breaking the yolk and mixing it in is absolutely delicious!

Step 4

Step 5

In a heated frying pan, add the bacon and cook until golden brown, rendering out plenty of fat. You’ll use this bacon fat to cook the Rosti. Once cooked, set the bacon aside on a plate.

Step 5

Step 6

To the drained julienned potatoes, add a pinch of salt and a pinch of pepper, and toss gently. Then, add the julienned onion and mix thoroughly. This allows the seasoning to penetrate the potatoes well.

Step 6

Step 7

Add 3 tablespoons of starch to the potato mixture and mix gently until just combined. The starch helps to bind the potatoes and contributes to a crispy texture. Be careful not to overmix.

Step 7

Step 8

Wipe the frying pan used for the bacon with a paper towel, add a little of the rendered bacon fat, and heat over medium-low heat. Spread the potato mixture into the pan, forming a round, flat pancake. Cook until golden brown and crispy on both sides, about 5-7 minutes per side.

Step 8

Step 9

Once the Rosti is beautifully golden and crispy, arrange the pre-cooked bacon and fried egg on top. Your delicious Swiss Potato Rosti is now complete! For an extra touch, sprinkle with some chopped parsley for garnish.
