- 2 cups grapeseed oil or vegetable oil (enough for deep frying)

Cooking Instructions
Step 1
First, wash and peel the potatoes thoroughly. Insert a sturdy skewer or wooden chopstick firmly into one end of each potato. Using a paring knife makes it easier to cut the potato thinly and evenly. While the skewer is inserted, tilt the knife parallel to the skewer and carefully cut the potato in a spiral, creating thin, even slices. Be careful not to cut all the way through so the potato stays attached to the skewer. Cutting thinly and evenly is key to achieving maximum crispiness.
Step 2
Pour the grapeseed oil generously into a deep pot or deep fryer, and heat over medium heat. To check if the oil is hot enough, dip a wooden chopstick into it; if small bubbles form around it, the oil is ready. Carefully place the prepared potatoes into the hot oil. Fry for about 3-4 minutes, or until the potatoes turn golden brown and crispy. Gently stir the potatoes occasionally while frying to ensure even cooking.
Step 3
Remove the fried potatoes from the oil and place them on paper towels or a wire rack to drain excess oil. While the potatoes are still hot, sprinkle them generously with the Parmesan cheese, dried parsley flakes, fine salt, and black pepper. Gently shake or toss the potatoes to ensure the seasonings are evenly distributed. These are best enjoyed immediately while warm and crispy!
