As evening approached, I felt like making some delightful sweet potato fritters. While I considered making a sweet potato pancake, I spotted the tempura batter mix and decided on fritters instead! If I had seen the pancake mix first, I probably would have made that. These golden-brown fritters are wonderfully crispy on the outside and tender and sweet on the inside – a perfect treat for any time of day.
Ingredients- 1 large sweet potato
- 1 cup tempura flour
- 1 cup water
- 3 ice cubes
- Vegetable oil for frying

I initially planned to slice the sweet potato into rounds, but due to some wrist pain, I ended up slicing them sideways as I went. The most important thing is to cook and enjoy!

Adjust the thickness of your sweet potato slices to achieve your desired texture. For an extra crispy bite, slice them thinly. If you prefer a softer, more tender interior, cut them thicker. I aimed for thin slices, but my cutting wasn’t perfect, and they naturally ended up a bit thicker. Still delicious!

Let’s make the batter for our crispy fritters! Combine 1 cup of tempura flour with 1 cup of water in a 1:1 ratio. For an extra crispiness boost, add 3 ice cubes to the batter. The coldness helps create a wonderfully crisp coating when fried.

Whisk the tempura flour and water together to form the batter. Don’t overmix; a slightly lumpy batter is actually great for achieving a crispier texture.

While you prepare the batter, lightly coat the sweet potato slices. Place the sliced sweet potato in a plastic bag, add 2 tablespoons of tempura flour, and shake well. This ensures the batter will adhere beautifully to the sweet potato.

Now it’s time to coat the sweet potatoes! Dip the flour-coated sweet potato slices into the prepared batter, ensuring they are evenly coated. The batter shouldn’t be too thin, as a slightly thicker coating will result in a more satisfying fritter.

Heat a generous amount of oil in a pan (if you don’t want to use a deep fryer). Carefully place the battered sweet potato slices into the hot oil. Fry them until they are golden brown and wonderfully crispy. Ensure the oil is at the right temperature for optimal frying.

Once fried to perfection, transfer the sweet potato fritters to a plate lined with paper towels to drain any excess oil. This step ensures they stay delightfully crisp.
