Main Ingredients- 2 handfuls of fresh bean sprouts (approx. 200g)
- 1/2 carrot (approx. 50g)
- 1 green onion (approx. 100g)
- 2 bowls of warm cooked rice (approx. 400g)
- 2 fresh eggs
Cooking Instructions
Step 1
First, wash the bean sprouts thoroughly. Blanch them in steaming or boiling water for 1-2 minutes until slightly tender. Be careful not to overcook, as maintaining their crispiness is key. Rinse the blanched bean sprouts under cold water and drain them completely. Finely chop the carrot and green onion into lengths similar to the bean sprouts.
Step 2
Now, let’s make the all-purpose seasoning sauce that will determine the flavor of our fried rice! In a bowl, combine 2 Tbsp soy sauce, 2 Tbsp gochujang, 2 Tbsp gochugaru, 2 Tbsp sugar, 2 Tbsp minced garlic, and 2 Tbsp sesame oil. Mix well until the sugar dissolves. This 1:1 ratio creates a versatile sauce perfect for any dish.
Step 3
Heat a pan over medium heat and add a generous amount of cooking oil. Add the chopped green onions and sauté over low heat. This process infuses the oil with the sweet aroma of the onions, creating fragrant green onion oil. Continue to cook until the green onions are golden brown and fragrant.
Step 4
Once the green onion oil is ready, add the finely chopped carrots to the pan and stir-fry them with the green onions. Sautéing the carrots adds sweetness and color, making the fried rice more appealing. Cook for about 1-2 minutes until the carrots are slightly tender.
Step 5
Now, add the prepared Baek Jong-won’s all-purpose seasoning sauce to the pan and stir-fry it. Sautéing the sauce in oil allows it to meld better with the ingredients and develop a deeper umami flavor. Stir-fry over low heat for about 30 seconds to 1 minute, being careful not to burn it, to release its aroma.
Step 6
Once the seasoning sauce is well sautéed, add the blanched and drained bean sprouts to the pan and stir-fry them briefly with the sauce. It’s crucial to cook the bean sprouts quickly, just enough to coat them with the seasoning (about 30 seconds to 1 minute), to preserve their crispiness. Overcooking will make them mushy.
Step 7
Finally, add the 2 bowls of warm cooked rice to the pan. Use a spatula to break up any clumps and stir-fry vigorously, mixing the bean sprouts and seasoning evenly into the rice grains. Continue to stir-fry for 2-3 minutes until the rice grains are separated and all ingredients are well combined.
Step 8
Serve the well-fried bean sprout fried rice attractively on a plate. The sight of fluffy, separated rice grains with perfectly mixed ingredients is already mouthwatering.
Step 9
For an enhanced flavor, top with a sunny-side-up fried egg or a generous sprinkle of crispy seaweed flakes, according to your preference. Your Baek Jong-won’s bean sprout fried rice, with its delightful combination of crunchy bean sprouts and sweet-savory seasoning, is now complete! Enjoy your delicious meal!
