Red Bean Puff Pastry Waffles Made with Leftover Puff Pastry
Did you have leftover puff pastry from making traditional Korean pies (Songpyeon)? Instead of letting it take up freezer space, transform it into a delightful treat! This recipe uses leftover puff pastry to create crispy waffles filled with sweet red bean paste. The mild flavor of the puff pastry perfectly complements the sweetness of the red bean filling, resulting in a wonderfully crisp exterior and a soft, delightful interior. They are especially delicious when enjoyed with coffee or milk. These red bean puff pastry waffles offer a unique twist, and they’re surprisingly easy to make. Let’s get started!
Ingredients- 5 sheets frozen puff pastry
- Approx. 300g red bean paste (anko)
- A little milk or water (for sealing)
Cooking Instructions
Step 1
Take the frozen puff pastry sheets out of the freezer about 10-15 minutes before you plan to use them. Let them thaw at room temperature until they are pliable but still firm and cool to the touch. Avoid over-thawing, as they become difficult to handle when too soft.
Step 2
Lightly dust your work surface with flour. Gently roll out each thawed puff pastry sheet with a rolling pin until it’s slightly thinner. Aim to maintain a rectangular shape that will fit your waffle maker. Adjust the size and shape of the pastry to fit your specific waffle iron.
Step 3
On half of the rolled-out puff pastry, spread about 60g of red bean paste, leaving a 1cm border around the edges. Be mindful not to overfill, as excess filling can leak out during cooking.

Lightly brush the border of the puff pastry (the part without the red bean paste) with milk or water using a pastry brush. This will help seal the pastry together when folded.
Step 5
Carefully fold the puff pastry in half, covering the red bean filling. Press down firmly along the edges with your fingers or a fork to seal the pastry completely, ensuring the filling won’t escape.
Step 6
Place the folded puff pastry carefully into your preheated waffle maker. Ensure you don’t overcrowd the waffle iron; leave some space for expansion.
Step 7
Close the waffle maker lid and cook over low heat until golden brown on both sides. Monitor the heat to prevent the pastry from burning. Once golden and crisp, carefully remove the waffle from the maker. For a neater appearance, trim any excess pastry that has puffed out around the edges with kitchen scissors.
