Begin by selecting fresh sweet potatoes. Wash them thoroughly under running water to remove any dirt. Peel the skin using a peeler or a knife. Next, slice the sweet potatoes into uniform, thin sticks, about 0.5 cm thick. It’s important to get the thickness right; too thick and they won’t fry evenly, too thin and they might break.

Place the julienned sweet potato sticks in a bowl of cold water and let them soak for about 10 minutes. This step is crucial for removing excess starch, which will result in crispier and cleaner-tasting fried sticks. It helps achieve that perfect crunch even without a batter.

Now it’s time to fry! Pour enough cooking oil into a pot or deep pan to generously cover the sweet potato sticks and preheat over medium heat. The ideal oil temperature is around 170-180°C (340-350°F). If the oil is too cool, the sweet potatoes will absorb too much oil; if it’s too hot, they’ll burn on the outside before cooking through. You can test the temperature by dipping a frying chopstick – if it bubbles vigorously, the oil is ready. Carefully add the sweet potato sticks to the hot oil, making sure not to overcrowd the pan.
