I’ve loved sweet potatoes since I was a child! This led me to experiment with cooking them in various ways, and I eventually perfected this delicious sweet potato candy (Goguma Mattang) recipe. These candies are perfectly crispy on the outside and soft on the inside, coated with a wonderfully sweet syrup. They make a fantastic snack for everyone, from kids to adults, and are a delightful treat for special occasions or a simple afternoon pick-me-up. Main Ingredients- 2 medium sweet potatoes
- Grapeseed oil (for frying, enough to cover the bottom of the pan)
Syrup Ingredients- 1.5 Tbsp sugar
- 1 Tbsp corn syrup (or rice syrup)
- 1 Tbsp grapeseed oil
- 2 Tbsp water
- 1.5 Tbsp sugar
- 1 Tbsp corn syrup (or rice syrup)

Cooking Instructions
Step 1
First, pour enough grapeseed oil into a frying pan to cover the bottom and preheat it over medium heat. You don’t need an excessive amount; just enough to cover the pan’s base is sufficient to prevent sogginess.

Wash the sweet potatoes thoroughly, peel them if desired, and cut them into bite-sized pieces. To achieve a crispy texture, it’s best to cut them slightly thicker than french fries. Once cut, carefully place the sweet potato pieces into the preheated oil and fry them over medium heat, stirring occasionally.

Continue frying the sweet potatoes until they turn golden brown and the edges start to firm up. Stir them intermittently to ensure all sides are evenly cooked and golden.

Once perfectly fried, remove the sweet potato pieces from the oil and place them on a plate lined with paper towels. This step helps to drain excess oil, contributing to a crispier final texture.

Now, let’s prepare the syrup. In a clean pan or pot, combine the sugar, corn syrup, grapeseed oil, and water. Cook this mixture over very low heat (around level 3 on an induction cooktop) until the sugar dissolves completely. Be very careful not to burn the sugar.

As the syrup begins to bubble, gently swirl the pan to help the syrup melt and mix evenly. Avoid stirring vigorously with a spatula, as this can cause the sugar to crystallize or become too thick and sticky.
