  • 100g boiled peas
  • Pinch of salt
  • 30ml milk
  • 1 egg
  • 30g breadcrumbs
  • 30g all-purpose flour
  • 100ml cooking oil (for frying)

Cooking Instructions

First, prepare the boiled peas, the essential base for your delicious pea korokke. You can use pre-boiled peas or cook fresh peas until they are tender.

In a blender or food processor, combine the 100g of boiled peas, 30ml of milk, and a pinch of salt. Blend until smooth. You can leave some pea texture for a rustic feel or blend until completely smooth, adjusting the consistency as needed.

Scoop out portions of the pea mixture with a spoon and roll them between your palms to form small, round shapes. Aim for bite-sized pieces, which are easy to fry and convenient to eat.

In a separate bowl, crack one egg and whisk it thoroughly with a fork. Well-beaten egg wash ensures an even coating for the crispy exterior.

Prepare the korokke for coating. First, lightly dust each pea ball with 30g of all-purpose flour, ensuring it’s evenly coated. Then, dip it into the whisked egg, letting any excess drip off. Finally, coat generously with 30g of breadcrumbs, pressing gently to help them adhere. A firm press will help the coating stay intact during frying.

Heat about 100ml of cooking oil in a deep pan or pot over medium heat. Test the oil temperature by dropping a few breadcrumbs; they should sizzle and float when the oil is ready. Carefully place the coated pea korokke into the hot oil. Fry for about 3-4 minutes, turning occasionally, until golden brown and cooked through. Drain the fried korokke on paper towels to remove excess oil and achieve maximum crispiness.
