Key Ingredients for Peanut Brittle- 300g shelled peanuts
- 4 tablespoons granulated sugar (approx. 60g)
- 3 tablespoons corn syrup or rice syrup (approx. 45ml)
- 2 tablespoons water (approx. 30ml)
- 1/2 tablespoon ground cinnamon (optional, for added aroma)
- 1/3 tablespoon cooking oil (approx. 5ml, for greasing the pan)
- 1 pinch of salt (to balance the sweetness)
Cooking Instructions
Step 1
First, heat a dry, ungreased pan over medium-low heat. Add the 300g of shelled peanuts and roast them for about 5-7 minutes, stirring constantly to prevent burning. Once the peanuts become fragrant and their skins start to lightly peel, remove them from the heat and let them cool slightly.
Step 2
In another pan (or the same one after wiping it clean), combine 4 tablespoons of sugar, 3 tablespoons of corn syrup (or rice syrup), 2 tablespoons of water, 1/2 tablespoon of cinnamon powder, and a pinch of salt. Place this mixture over medium heat and stir until the sugar dissolves and the syrup begins to boil.
Step 3
As soon as the syrup starts boiling, immediately reduce the heat to low. Add the roasted peanuts to the syrup. Quickly but gently toss them to ensure the syrup evenly coats each peanut. The syrup will become sticky and start clinging to the peanuts. Toss for about 30 seconds to 1 minute only. (Over-tossing can make the brittle too hard.)
Step 4
Pour the coated peanuts onto a sheet of parchment paper. Use a spoon or spatula to spread the mixture evenly, flattening the top and ensuring the peanuts aren’t clumped together. Be careful as the mixture will be hot. You can wear gloves and gently press it down if needed.
Step 5
Let the Peanut Brittle on the parchment paper cool in a cool place (room temperature or a balcony) for about 5 to 10 minutes. Before it completely hardens, cut it into bite-sized pieces. Once cooled, enjoy your crunchy and sweet homemade Peanut Brittle!
