  • 4 fresh ginseng roots

Syrup Seasoning

  • 3 Tbsp granulated sugar
  • Plenty of cooking oil (for deep-frying)
  • A pinch of sesame seeds (for garnish)

Cooking Instructions

First, wash the ginseng roots thoroughly under running water and pat them dry. Then, cut the ginseng into bite-sized pieces, approximately 2cm in length. Cutting them into a triangular prism shape will make them look more appealing and easier to fry. You can adjust the thickness according to your preference.

Heat a generous amount of cooking oil in a deep pan or wok to 175°C (350°F). If you have a deep-frying thermometer, set it to 175°C. If not, a wooden chopstick inserted into the oil should produce steady, medium-sized bubbles. Carefully add the prepared ginseng pieces to the hot oil and deep-fry for about 2-3 minutes until they turn a golden brown and crispy. Remove the fried ginseng and place them on paper towels to drain excess oil.

Prepare another pan, adding just a tiny bit of oil (or no oil at all). Add 3 tablespoons of granulated sugar to the pan. Over medium-low heat, melt the sugar slowly, being careful not to burn it. Stir continuously until the sugar caramelizes into a clear, golden liquid syrup.

Once the sugar has completely melted and turned into a syrup, add the fried ginseng pieces that have been drained of oil. Toss them quickly to coat evenly with the sugar syrup. It’s crucial to mix swiftly to ensure the ginseng is well-coated. Finally, sprinkle with sesame seeds for a beautiful garnish. Your delicious crispy sweet ginseng candies are ready!
