Main Ingredients

  • 300g firm tofu (firm or extra-firm recommended)
  • Vegetable oil for frying (generous amount)
  • 1/3 apple
  • 1/3 onion
  • 1/2 handful carrot (thinly sliced)
  • 1/2 handful green onion (chopped)
  • 3 Tbsp flour (for coating tofu)
  • Pinch of salt

Crispy Batter

  • 1 cup flour
  • 1 cup cold water

Sweet and Sour Sauce

  • 1 Tbsp potato starch
  • 150ml cold water
  • 3 Tbsp soy sauce
  • 3 Tbsp brown sugar (adjust to taste)
  • 5 Tbsp vinegar (adjust to taste)

Cooking Instructions

Step 1

Pat the tofu dry with paper towels to remove as much moisture as possible. Cut it into bite-sized pieces, about 1.5-2 cm thick. Gently press the cut tofu again with paper towels to absorb any remaining moisture. Lightly sprinkle salt on both sides of the tofu pieces. Repeating this step will help firm up the tofu, preventing it from breaking apart when frying and ensuring a crispier texture.

Step 1

Step 2

Wash the apple, onion, and carrot. Core the apple and slice the apple, onion, and carrot thinly into uniform pieces, about 0.5 cm thick. Chop the green onions. You can also add other vegetables like cucumber for extra flavor and texture.

Step 2

Step 3

Dust the dried and salted tofu pieces evenly with 3 tablespoons of flour. To ensure the flour coats evenly without breaking the tofu, you can place the tofu and flour in a resealable bag and gently shake it.

Step 3

Step 4

In a large bowl, combine 1 cup of flour and 1 cup of cold water. Whisk with chopsticks or a whisk until smooth, creating the batter. Avoid overmixing, as this can develop gluten and make the fried tofu tough. Mix just until no lumps of flour remain. The batter should have a consistency similar to thin pancake batter.

Step 4

Step 5

Heat a generous amount of vegetable oil in a deep pan over medium-high heat to 170-180°C (340-355°F). (Test the oil temperature by dropping a bit of batter; it should sizzle and float immediately). Dip the flour-coated tofu pieces into the batter, ensuring they are fully coated, then carefully place them into the hot oil. Fry for several minutes until golden brown and crispy, turning occasionally. Avoid overcrowding the pan, as this will lower the oil temperature. Fry in batches if necessary. Once fried, remove the tofu and drain on a wire rack or paper towels.

Step 5

Step 6

To prepare the sauce, mix 1 tablespoon of potato starch with 150ml of cold water in a small bowl until smooth. Set aside. Having the starch slurry ready will make sauce preparation quick and easy.

Step 6

Step 7

In another saucepan, combine 3 tablespoons of soy sauce, 3 tablespoons of brown sugar, and 5 tablespoons of vinegar. Stir well. (Adjust the sugar and vinegar to your preference). Bring the mixture to a boil over medium-high heat. Gradually pour in the starch slurry while stirring continuously until the sauce thickens. Add the sliced apple, onion, and carrot. Continue to cook for another 1-2 minutes until the vegetables are slightly tender. Stir in the chopped green onions just before turning off the heat. Pour the warm sauce over the freshly fried crispy tofu and enjoy!
