Dumplings and Vegetables
  • 8 frozen dumplings
  • 1/2 stalk green onion
  • 2 cloves garlic
  • 1 red chili pepper
  • A little cooking oil
  • 1 Tbsp red chili flakes

Ganpung Sauce
  • 1 Tbsp soy sauce
  • 1 Tbsp oligosaccharide (or corn syrup)
  • 1 Tbsp cooking wine (mirin)
  • 1/2 Tbsp oyster sauce
  • 2 Tbsp vinegar

Cooking Instructions

Step 1

Place the 8 frozen dumplings in a plastic bag. Drizzle about 1-2 tablespoons of cooking oil over them. Seal the bag and shake well to coat each dumpling evenly with oil. This step ensures the dumplings become extra crispy when cooked.

Step 2

Arrange the oil-coated dumplings in a single layer in your air fryer basket. Air fry at 200°C (400°F) for 15 minutes, or until they are golden brown and crispy. Adjust time as needed based on your air fryer model.

Step 3

While the dumplings are cooking, prepare your aromatics and vegetables. Thinly slice the green onion and red chili pepper diagonally. Thinly slice the garlic cloves.

Step 4

In a small bowl, combine all the ingredients for the Ganpung sauce: 1 Tbsp soy sauce, 1 Tbsp oligosaccharide, 1 Tbsp cooking wine, 1/2 Tbsp oyster sauce, and 2 Tbsp vinegar. Whisk well until thoroughly combined. This sauce balances sweet, sour, and savory flavors.

Step 5

Heat 1-2 tablespoons of cooking oil in a pan or wok over medium-low heat. Add the sliced green onions, garlic, and red chili flakes. Stir-fry gently until fragrant, being careful not to burn the garlic and chili flakes. You want to release their aroma into the oil.

Step 6

Add the crispy air-fried dumplings to the pan with the fragrant aromatics. Pour the prepared Ganpung sauce over everything.

Step 7

Turn the heat up to high. Stir-fry quickly for about 1-2 minutes, tossing constantly, to coat the dumplings evenly with the glossy sauce. The goal is to create a beautiful glaze without making the dumplings soggy. This quick stir-fry ensures all the flavors meld together perfectly.

Step 8

Serve immediately! These Ganpung Mandu are delicious served over steamed rice as a hearty meal, or as a perfect accompaniment to a cold beer. For an extra touch, you can garnish with a sprinkle of toasted sesame seeds.
