Step 1
First, prepare the garaetteok. If the rice cakes are too long or thick, they can be difficult to fry or coat with sauce, so cut them into bite-sized pieces (about 3-4 cm). If the rice cakes feel dry, soaking them briefly in water can help.
Step 2
Pour a generous amount of cooking oil into a wide pan or wok and heat over medium heat. Once the oil is moderately hot, add the cut garaetteok and stir them around to fry until golden brown. It’s important to stir occasionally so the rice cakes don’t stick together. Frying them until golden brown will give them a nice crispy texture.
Step 3
Once the garaetteok are nicely fried, remove them with a slotted spoon to drain excess oil and set them aside briefly. Wipe the pan clean with a paper towel to prepare for the next step. Cleaning the pan ensures the sauce doesn’t burn and results in a neat finish.

Now, let’s make the delicious sauce. In the cleaned pan, combine 2 Tbsp sugar, 4 Tbsp oligosaccharide, 2 Tbsp honey, 1/2 Tbsp soy sauce, and 20ml water. Stir over medium-low heat until the sugar dissolves and all ingredients are well combined. Let it simmer gently.

Once the sauce begins to bubble, maintain medium-low heat and let it simmer for another 20-30 seconds to achieve the desired consistency. Be careful not to overcook, as the sauce can burn. Now, add the fried garaetteok to the sauce pan and quickly toss to coat.

Continue to stir-fry the rice cakes in the sauce for about 1 minute, coating them evenly. Cook until the sauce is slightly thickened and coats the rice cakes beautifully. Keep stirring to prevent the rice cakes from sticking or burning.

Transfer the finished garaetteok candies to a serving plate. Sprinkle generously with toasted sesame seeds for a final touch and an appetizing look. Enjoy them immediately while warm for the best crispy outside and chewy inside texture!
