This recipe elevates the classic treat by topping it generously with almond slices for added nutty flavor and delightful crunch. Each bite offers a perfect balance of sweetness and toasty almond notes, complemented by the satisfying texture of the sliced almonds. This recipe yields enough for two 12-count baking sheets, so feel free to halve the ingredients if you only wish to make one batch.

  • 100g almond flour
  • 140g powdered sugar
  • 50g cake flour
  • 100g sliced almonds

In a clean bowl, whisk the egg whites. Gradually add the sugar in three additions while whisking, until stiff and glossy peaks form. It’s important to whip until the peaks stand firmly.

In a separate bowl, sift together the almond flour, powdered sugar, and cake flour. Add the sifted dry ingredients to the meringue. Gently fold them in using a spatula, scooping from the bottom of the bowl upwards. Be careful not to overmix, as this can deflate the meringue. Mix just until no dry streaks remain.

Transfer the batter to a piping bag and pipe the dacquoise onto your molds or parchment paper. Pipe them slightly higher than the mold to allow for puffiness when baked, making them look more appealing.

Once piped, use a bench scraper or a flat spatula to smooth and flatten the tops of the dacquoise. This ensures even baking.
