  • 2 Tbsp strawberry jam

Icing Ingredients

  • 100g powdered sugar (approx. 1 cup by paper cup)
  • 1 egg white
  • 1 tsp lemon juice (or adjust to 1/2 – 1 tsp to taste)

First, let’s prepare the sweet icing that will go on the toast. Carefully separate the white from 1 egg and place it in a bowl.

Add approximately 100g of powdered sugar to the egg white. If you don’t have a scale, about 1 paper cup’s worth is a good estimate. Mix the two ingredients thoroughly with a spatula or whisk until well combined.

Now, it’s time to add the lemon juice. Add about 1 teaspoon of lemon juice, or adjust the amount to your preference, between 1/2 to 1 teaspoon. Lemon juice adds a refreshing note to the icing and helps prevent crystallization.

Use a whisk to blend the mixture smoothly. It’s important to mix until the powdered sugar is completely dissolved with no lumps. The consistency should be such that the mixture flows continuously from the whisk, and the fallen trails remain visible for about 10 seconds. If it’s too thin, it might run off the toast, so aim for a slightly thicker consistency.

Prepare the strawberry jam for easy squeezing. Place the jam in a plastic bag and mash it well, or use a rolling pin to make it smooth and lump-free. If you prefer a finer texture, you can pass it through a sieve.

Neatly trim the crusts off the bread slices. Then, cut the bread into 2 or 3 pieces each, depending on your desired size. Bite-sized pieces are usually best.

Spread the prepared icing evenly onto one side of each bread slice. Ensure it’s not too thin, as the jam might seep through when baked if the icing layer is too light.

Snip a small corner off the plastic bag containing the strawberry jam. Squeeze the jam in a lattice pattern over the iced toast. To achieve a beautiful pattern, avoid squeezing too closely together, as the jam might bubble and spread out during baking. Aim for about a 1cm gap between the lines.

Bake in a preheated air fryer at 170°C (340°F) for about 2 minutes. Note that the temperature and time may vary depending on your air fryer’s model and size. As a starting point, try baking at 160°C (320°F) for 5 minutes, then check the browning. Adjust the time as needed to reach your desired golden-brown color. Bake until lightly golden and crispy, being careful not to burn it!
