Main Ingredients

  • 1 medium cucumber
  • 1 pinch of coarse salt (for salting the cucumber)
  • 1 Tbsp cooking oil (approx. 15ml)
  • 1 Tbsp minced garlic (approx. 15g)
  • 1 tsp sesame oil (approx. 5ml)
  • 1 Tbsp toasted sesame seeds (approx. 10g)

Cooking Instructions

Step 1

First, wash the cucumber thoroughly and pat it dry. Then, slice it diagonally into about 0.3cm thick pieces. Avoid slicing too thinly, as it can become mushy; aim for a moderate thickness.

Add a pinch of coarse salt to the sliced cucumbers and gently toss to salt them for about 10 minutes. Salting draws out the moisture from the cucumber, enhancing its crispiness. After salting, rinse lightly under running water and squeeze out excess moisture by hand.

Heat a pan over medium-low heat, add 1 Tbsp of cooking oil and 1 Tbsp of minced garlic. Sauté gently until fragrant, being careful not to burn the garlic. You want a mild garlic aroma.

Once the garlic is fragrant, add the drained cucumber slices and stir-fry quickly over high heat. Do not overcook, as it will become soft. Sautéing for just 1-2 minutes is key to maintaining the cucumber’s crispness.

Finally, turn off the heat, add 1 tsp of sesame oil and 1 Tbsp of toasted sesame seeds, and toss gently to finish. This adds a savory and nutty flavor to your delicious sautéed cucumber salad.
