Crispy Summer Delight! Cucumber and Baby Napa Cabbage Kimchi (Geotjeori) Recipe
Fresh and Vibrant! A Mouthwatering Spicy and Tangy Cucumber Baby Napa Cabbage Geotjeori
In the summer, I try to eat plenty of vegetables, and among them, I love fresh geotjeori. So, I’ve made a spicy and refreshing version of this delightful dish. It’s perfect for brightening up your meals with its crisp texture and vibrant flavors.
Main Ingredients- 1/2 cucumber
- 3 leaves of baby napa cabbage
Seasoning Mix- 2 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp minced garlic
- 1 Tbsp fish sauce (anchovy or sand lance)
- 1/2 Tbsp soy sauce for soup
- 1 Tbsp vinegar
- 2/3 Tbsp sugar
- 1 Tbsp toasted sesame seeds (or crushed sesame seeds)
- 2 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp minced garlic
- 1 Tbsp fish sauce (anchovy or sand lance)
- 1/2 Tbsp soy sauce for soup
- 1 Tbsp vinegar
- 2/3 Tbsp sugar
- 1 Tbsp toasted sesame seeds (or crushed sesame seeds)
Cooking Instructions
Step 1
First, wash the cucumber and baby napa cabbage thoroughly. Pat the cucumber dry and remove any outer leaves from the cabbage that aren’t needed. Prepare them for cutting.
Step 2
Cut the prepared cucumber and baby napa cabbage into bite-sized pieces, or slightly larger, by making rough, quick cuts. This will help maintain their crispness.
Step 3
In a small bowl, combine all the seasoning ingredients: gochugaru, minced garlic, fish sauce, soup soy sauce, vinegar, sugar, and sesame seeds. Mix them well with a spoon to create the dressing.
Step 4
Place the cut cucumber and baby napa cabbage into a larger mixing bowl.
Step 5
Evenly drizzle the prepared seasoning mix over the vegetables in the bowl.
Step 6
Gently toss the vegetables with your hands to ensure the seasoning is evenly distributed. Be careful not to overmix, as this can make the vegetables mushy. Taste and adjust the seasoning as needed: add more soy sauce or fish sauce if it’s too bland, more sugar if you prefer it sweeter, or more vinegar if you want it tangier. (Remember that the saltiness of soy sauce and fish sauce can vary by brand, so taste as you go!)
Step 7
Transfer the well-mixed geotjeori to a serving dish. Freshly made geotjeori is best enjoyed immediately. Enjoy this refreshing summer side dish with your meal!
