First, prepare the main ingredients: 300g of potatoes (about 2 medium-sized) and 40g of carrot (about 1/4), which will add a lovely color.

Wash the potatoes thoroughly. Using a mandoline slicer or a sharp knife, cut them into thin, uniform strips. Using a mandoline ensures consistent thickness, which helps the potatoes cook evenly and prevents them from breaking apart easily during stir-frying.

Slice the carrot into thin strips of similar thickness to the potatoes, also using a mandoline or knife. The carrots will add a beautiful vibrant color to the dish when stir-fried with the potatoes.

Place the potato strips in a bowl and rinse them gently under running water once or twice to remove excess starch. Rinsing helps prevent the potato strips from sticking together or becoming mushy when cooked.

While these potatoes are relatively firm and thin, if you want to ensure maximum crispness and minimal breakage, you can soak the potato strips in cold water for 10-20 minutes. Afterward, drain them thoroughly before cooking. This step is optional but highly recommended for a perfectly crisp result.

Heat a skillet or wok over medium heat and add a generous amount of cooking oil. Add the drained potato strips and stir-fry for about 4 minutes. Cook until the potato strips become translucent and are about halfway cooked through – they should start to soften.
