Easy and Delicious Stir-Fried Lotus Root Recipe

Main Ingredients- 740g Prepared Lotus Root
- 1/2 cup Pumpkin Seeds
Seasoning- 3.5 Tbsp Soy Sauce
- 1 Tbsp Sugar
- 1 Tbsp Corn Syrup (or Rice Syrup)
- 2 tsp Mirin (Rice Wine)
- 4 Tbsp Kombu Broth (or Water)
- 1 tsp Minced Garlic

Cooking Instructions
Step 1
First, peel the prepared lotus root thinly using a peeler. Then, slice the lotus root as thinly as possible, ensuring the characteristic holes are visible. Thin slices allow the sauce to penetrate better and result in a softer texture.
Step 2
Rinse the sliced lotus root once under running water. After rinsing, soak the slices in rice water for about 10 minutes. This step effectively removes any earthy smell or staleness. If you don’t have rice water, soaking in plain cold water is also fine.
Step 3
Heat 1 tablespoon of cooking oil in a preheated frying pan. Add the drained lotus root slices and stir-fry over high heat for about 2 minutes. This quick stir-fry helps maintain the crispiness while lightly cooking the surface.
Step 4
Now, add the seasoning ingredients: 3.5 tablespoons of soy sauce, 2 teaspoons of mirin, 1 tablespoon of sugar, and 4 tablespoons of kombu broth (or water). Mix well. Reduce the heat to medium-low and continue to stir-fry for another 2 minutes, allowing the lotus root to absorb the flavors.
Step 5
Add the pumpkin seeds and 1 teaspoon of minced garlic. Continue to cook until the sauce has mostly reduced and coated the lotus root, about 3 minutes. The sauce should become slightly thick and glossy. Stir occasionally to prevent sticking.
Step 6
Finally, add 1 tablespoon of corn syrup or rice syrup. Stir-fry over high heat for just 1-2 minutes, tossing gently to coat. The syrup will add a beautiful sheen and extra sweetness. Turn off the heat, plate, and enjoy your delicious stir-fried lotus root!
