Crispy Stir-Fried Bean Sprouts and Chives
A Delicious Side Dish with a Satisfying Crunchy Texture
Bean sprouts are a readily available and easy-to-cook ingredient that graces many Korean tables. While many prefer them blanched and seasoned, I personally love them stir-fried! To prevent a long cooking time and potential fishy odor when stir-frying bean sprouts directly, I find that parboiling them halfway before stir-frying results in a wonderfully crisp texture. This time, I added chives for a delightful twist, though my family requested the original plain version next time. So, we’ve agreed to omit chives from now on! Main Ingredients- 2 bags (approx. 400g) bean sprouts
- 1 bunch (approx. 50g) chives
Seasoning Ingredients- 2/3 Tbsp salt (adjust to taste)
- 2 Tbsp gochugaru (Korean chili flakes)
- A pinch of MSG or flavor enhancer (optional)
- 1 tsp minced garlic
- 2 Tbsp cooking oil (e.g., vegetable or canola oil)
- A sprinkle of toasted sesame seeds (for garnish)
- A drizzle of sesame oil (for finishing)
- 2/3 Tbsp salt (adjust to taste)

Cooking Instructions
Step 1
First, thoroughly wash the bean sprouts under running water. Place the washed bean sprouts in a pot or pan, cover with a lid, and steam over medium heat for about 3-4 minutes. Once the bean sprouts are halfway cooked, open the lid and add the cooking oil. Chop the chives into appropriate lengths for the bean sprouts.
Step 2
Now, add all the seasoning ingredients. Mix in the salt, gochugaru, minced garlic, and flavor enhancer, and stir-fry everything together with the bean sprouts. Adjust the saltiness to your preference; you can add a little more salt if you like it saltier.
Step 3
When the bean sprouts are almost fully cooked, add the chopped chives and stir-fry briefly. Chives can become tough and lose their freshness if overcooked, so stir-fry them quickly over high heat. Finally, turn off the heat and drizzle with toasted sesame seeds and sesame oil for added aroma and flavor.
Step 4
Stir-fry everything in the pan until the ingredients and seasonings are well combined. It’s important not to overcook them to maintain the crispness of the bean sprouts. Continue stir-frying over medium-high heat for about 1-2 minutes.
Step 5
Transfer the well-stir-fried bean sprouts and chives to a nice serving plate. They are delicious served on top of warm rice or enjoyed as a standalone side dish.
