Stem Lettuce Stir-Fry with Perilla Seeds
Experience an incredible crunch! We’ve added the nutty richness of perilla seeds to the surprisingly crisp stem lettuce. A delightful side dish that’s both healthy and delicious.
Main Ingredients- 1/2 bunch stem lettuce (approx. 200g)
- 1 cup water (200ml)
Seasoning- 2 Tbsp tuna extract
- 1/2 Tbsp salt
- 1 Tbsp minced garlic
- 4 Tbsp perilla oil
- 7 Tbsp hulled perilla seed powder
- 2 Tbsp tuna extract

Cooking Instructions
Step 1
First, prepare the dried stem lettuce. Place the stem lettuce in 1 cup (200ml) of clean water and soak for about 30 minutes. This will rehydrate the lettuce, causing it to swell to about three times its original size.
Step 2
After soaking, gently rub the stem lettuce under running water 2-3 times to wash away any dirt or debris. Ensure it’s thoroughly cleaned. Lightly squeeze out excess water, then cut the lettuce into manageable pieces, about 5-7 cm in length.
Step 3
Now, let’s make the flavorful perilla seed sauce. In a bowl, combine 7 tablespoons of hulled perilla seed powder with 1 cup (200ml) of water. Whisk until smooth and well combined, aiming for a slightly thick consistency.
Step 4
Time to stir-fry! Heat a frying pan over medium-low heat and add 4 tablespoons of perilla oil. Add 1 tablespoon of minced garlic and sauté until fragrant. Then, add the prepared stem lettuce to the pan. Season with 2 tablespoons of tuna extract and 1/2 tablespoon of salt, stirring gently to combine everything evenly.
Step 5
Continue to stir-fry for about 5 minutes. Stem lettuce retains its crispness even when cooked for a while. Finally, pour in the perilla seed mixture prepared in step 2 and stir-fry for another minute or so until heated through.
