  • 1 squid (cleaned)
  • 2 Tbsp all-purpose flour
  • 5 Tbsp breadcrumbs
  • 3 eggs
  • 200g cooking oil (generous amount)
  • 300g cooked rice (warm)
  • 6-7 cloves whole garlic
  • Pinch of salt
  • Pinch of black pepper

Sauce Ingredients

  • 3 Tbsp soy sauce
  • 4 Tbsp mirin (or cooking sake)
  • 1 Tbsp water
  • 1/2 Tbsp sugar
  • 1/2 Tbsp sesame oil
  • 1/4 onion (thinly sliced)

First, thinly slice the onion for the sauce and peel the whole garlic cloves, then slice them thinly. Preparing the ingredients in advance will make cooking much smoother.

Now, let’s make the delicious soy sauce! In a pot, combine soy sauce, mirin, water, and sugar. Bring to a boil, then add the thinly sliced onion and cook briefly until softened. The onion will release its sweetness, enhancing the flavor. Finally, drizzle in the sesame oil to complete the flavorful soy sauce!

Crack the eggs into a bowl and whisk them gently with a fork or whisk until smooth to create the egg wash. This will be used for coating the squid, so ensure it’s well beaten.
