Main Ingredients

  • 4 medium potatoes
  • 1 cup (approx. 200ml) store-bought tomato sauce
  • 6 slices bacon
  • 2.5 cups vegetable oil (for frying, approx. 500ml)

Sauce and Seasoning

  • 1 tsp paprika (or chili powder)
  • 1.5 tsp hot sauce
  • 0.5 tsp minced garlic
  • 2 tsp mayonnaise
  • 0.5 tsp olive oil

Cooking Instructions

First, thoroughly wash the 4 medium potatoes. Place them in a pot, cover with water, and add 1 tablespoon of salt. Bring to a boil over high heat and cook for about 15-20 minutes, or until the potatoes are tender.

To check if the potatoes are cooked, insert a fork or skewer. If it goes in easily with little resistance, they are perfectly cooked.

While still warm, carefully peel the cooked potatoes. Cut each potato into 6 equal pieces, then dice them into bite-sized cubes.

Now it’s time to fry the potatoes. In a deep pan or pot, pour in about 2.5 cups of vegetable oil, enough to generously cover the potato cubes. Heat the oil to 170°C (340°F) and carefully add the diced potatoes for the first fry.

Fry the potatoes until they turn golden brown and become crispy. Once fried, remove them with a slotted spoon and drain on a wire rack to remove excess oil. This step ensures extra crispiness.

Crisp up the bacon by cooking it in a pan until golden and slightly crispy. Once cooked, drain on paper towels to remove excess grease, then chop it into approximately 4cm pieces.

Let’s prepare the zesty ‘bravas’ sauce. In a bowl, combine 1 cup of tomato sauce with 1 teaspoon of paprika (or chili powder) and 1.5 teaspoons of hot sauce. Stir well until thoroughly combined. Feel free to adjust the hot sauce for your preferred level of spice.

Heat a tablespoon of olive oil in a small saucepan over medium heat. Add the prepared sauce mixture and the chopped bacon. Simmer gently for a few minutes until the sauce thickens slightly. This allows the flavors to meld beautifully.

To make the aioli, whisk together 2 teaspoons of mayonnaise, 0.5 teaspoon of minced garlic, and 0.5 teaspoon of olive oil in a small bowl. Mix until smooth and creamy. For a milder garlic flavor suitable for children, use a smaller amount of garlic.

Arrange the double-fried potatoes attractively on a serving plate. Generously spoon the warm, simmering tomato and bacon sauce over the crispy potatoes.
