How to Make Delicious Soy Glazed Chicken Wings & Drumettes at Home
As someone who absolutely loves chicken dishes, I’ve created a recipe featuring chicken as the main ingredient. This is a soy-glazed chicken dish specifically made with wingettes and drumettes. Enjoy this savory and sweet treat!
Chicken Ingredients- 20 Chicken Wingettes and Drumettes
- 1 pinch Salt
- 1 pinch Black Pepper
- 1-2 Tbsp Olive Oil
- 1 cup Starch (cornstarch or potato starch)
- Milk (optional, for removing gamey smell)
Soy Glaze Ingredients- 4 Tbsp Soy Sauce
- 2 Tbsp Honey or Corn Syrup
- 1/2 Tbsp Oyster Sauce
- 3 Tbsp Water
- 3 Tbsp Mirin (or cooking wine)
- 1 Tbsp Minced Garlic
- 4 Tbsp Soy Sauce

Cooking Instructions
Step 1
To remove any gamey odor from the chicken wingettes and drumettes, soak them in milk or leftover soju for about 20-30 minutes. This step helps tenderize the chicken and ensures a cleaner taste.
Step 2
After soaking, rinse the chicken thoroughly under cold running water. Thorough rinsing removes any residual milk or impurities, leading to a cleaner flavor.
Step 3
Pat the chicken pieces completely dry with paper towels. Excess moisture can cause splattering during cooking and lead to soggy chicken. Lightly season the dried chicken with black pepper for a basic flavor. (Optional Tip: You can add a tiny pinch of salt if you prefer, but since the glaze is flavorful, it’s often omitted).
Step 4
Coat the pepper-seasoned chicken pieces evenly with starch. This coating will help create a wonderfully crispy texture when cooked. Tip: Avoid applying marinades with minced garlic directly before air frying, as they can burn easily. Instead, toss the chicken with 1-2 tablespoons of olive oil or cooking oil just before placing it in the air fryer. This prevents the surface from drying out and keeps the chicken moist.
Step 5
While the chicken is cooking in the air fryer, prepare the delicious soy glaze. In a small bowl, combine the soy sauce, honey, oyster sauce, water, mirin, and minced garlic. Whisk well until the honey or sugar is fully dissolved. This mixture will create a rich and savory glaze.
Step 6
Arrange the starch-coated chicken pieces in a single layer in your air fryer basket. Cook at 180°C (350°F) for about 10 minutes. Midway through, flip the pieces to ensure even cooking and crisping. Cooking times may vary depending on your air fryer’s model.
Step 7
After the first 10 minutes, flip the chicken pieces again and cook for another 10 minutes at the same temperature (180°C / 350°F). This second round of cooking will ensure the chicken is golden brown and perfectly crispy.
Step 8
Transfer the cooked chicken wings and drumettes to a pan. Pour the prepared soy glaze over them and stir-fry over medium-high heat for about 2 minutes. You don’t need to add extra oil to the pan. Continuously toss the chicken to coat it evenly with the glaze and allow it to thicken slightly, creating a beautiful sheen.
Step 9
Serve the glazed chicken wings and drumettes immediately on a platter. They are delicious on their own, but a side of fresh salad would complement the dish beautifully for a balanced meal.
