Main Ingredients- 1 block pork belly (approx. 600g)

Step 1
First, score the skin of the pork belly with a sharp knife, making shallow, parallel cuts. This helps the skin become extra crispy when cooked and allows seasonings to penetrate the meat. After scoring, generously coat the pork belly with olive oil. The oil acts as a barrier, keeping the meat moist as it roasts.
Step 2
Next, season the olive oil-coated pork belly evenly with coarse black pepper and herb salt. Using freshly ground coarse pepper will enhance the aroma. Herb salt adds a rich flavor without needing separate herbs. Gently rub the seasonings into the surface of the meat with your hands to ensure even distribution.

Now, place the seasoned pork belly into a preheated oven set at 200°C (400°F) and roast for about 20 minutes for the first cook. (Tip: Instead of roasting the whole piece, cutting it into bite-sized pieces beforehand can help it cook more evenly and achieve a crispier exterior. This method is much more efficient than roasting it whole and slicing later.)
Step 4
After 20 minutes, carefully remove the pork belly from the oven and flip it over. Then, return it to the oven at 200°C (400°F) and continue roasting for another 10 to 20 minutes. You can adjust this time to achieve your desired level of doneness. I personally roasted it for close to 20 minutes to get an extra crispy crust. To check if it’s done, insert a skewer into the thickest part; if no pink juices run out, it’s ready.
