Cooking Instructions
Step 1
First, let’s prepare the batter for frying. In a clean bowl, add 1 cup of tempura flour.
Step 2
Prepare 2/3 cup of cold water for the batter. The amount of water can be adjusted slightly depending on the tempura flour’s absorption.
Step 3
Don’t add all the water at once. Gradually pour the water into the flour while mixing. This helps prevent lumps and creates a smooth batter.
Step 4
The batter consistency should be neither too thin nor too thick; aim for a pourable consistency. When you lift a whisk or chopstick, the batter should fall cleanly.
Step 5
Coat the prepared shrimp evenly with the batter. Ensure each shrimp is lightly coated; too much batter can make the shrimp soggy. A thin coating is key for crispiness.
Step 6
Now it’s time to fry. Pour a generous amount of cooking oil into a deep pan or wok and turn the heat to medium.
Step 7
To check the oil temperature, drop a small amount of batter into the hot oil. If it immediately floats to the surface, the oil is ready. If it sinks, the oil is too cool, and if it browns too quickly, it’s too hot.
Step 8
Once the oil is at the right temperature, carefully add the battered shrimp to the pan. Avoid overcrowding the pan, as this can lower the oil temperature and cause the shrimp to stick together. Fry the shrimp until golden brown on both sides.
Step 9
When the shrimp are golden and crispy, remove them from the oil and place them on a wire rack or paper towels to drain excess oil. This step ensures maximum crispiness.
Step 10
Let’s make the chili shrimp next. Without adding oil to the pan, sauté the chopped onion over medium-low heat for about 30 seconds until fragrant.
Step 11
Once the onion is slightly translucent, turn off the heat. Add 3 Tbsp ketchup, 1 Tbsp oyster sauce, and 1 Tbsp sugar to the pan.
Step 12
Mix all the sauce ingredients with the sautéed onion until well combined. Turning off the heat before mixing prevents the sauce from burning and keeps it glossy.
Step 13
Add the fried shrimp to the sauce and toss quickly to coat evenly. Do not reheat the pan; toss using residual heat to maintain the shrimp’s crispiness.
Step 14
Now for the creamy shrimp. In a clean pan, combine 2 Tbsp sugar and 1 Tbsp vinegar. Turn the heat to very low.
Step 15
Once the sugar has dissolved and forms a syrup, immediately turn off the heat. Overheating can cause it to burn.
Step 16
While the syrup is still warm, add 4 Tbsp of mayonnaise. Stir continuously until the mixture is smooth and creamy, with no lumps.
Step 17
Once the creamy sauce is ready, add the fried shrimp and gently toss to coat them thoroughly with the sauce.
Step 18
Finally, let’s make the pepper shrimp. In a pan, combine 1 Tbsp sesame oil, 1 Tbsp oyster sauce, 1 Tbsp water, and a few grinds of black pepper to your liking.
Step 19
Mix these ingredients over low heat. As soon as the sauce begins to simmer, turn off the heat. This quick cooking process infuses the flavors wonderfully.
Step 20
Add the fried shrimp to the sauce and toss to coat evenly. Your delicious pepper shrimp is now ready!
