Instead of the usual thin, round radish pancakes, I’ve made these with shredded radish for a delightful crunchy texture. It’s like making radish salad and deciding to pan-fry some of it. It’s even tastier when served with a dollop of sweet and sour radish salad on top.

Ingredients

  • 1/3 Korean radish
  • A little bit of carrot
  • 1 Onion
  • 1 cup Whole wheat flour
  • 1 cup Water
  • A little bit of kelp powder or dried anchovy powder (optional)
  • Cooking oil, as needed

Cooking Instructions

Step 1

First, wash and prepare the radish, carrot, and onion. Then, finely shred all three vegetables. Place the shredded vegetables in a bowl. Prepare 1 cup of whole wheat flour and 1 cup of water. We’ll mix the flour and water in approximately a 1:1 ratio to create the batter. Combine the shredded vegetables with this batter and mix well to form the pancake batter.

The batter consistency should be based on the 1:1 ratio of flour to water, but feel free to add a little more water or flour as needed to achieve your desired consistency. If the batter is too thin, the pancake might tear, and if it’s too thick, it can become dense. Aim for a smooth, pourable consistency.

Season the batter with salt for flavor. To add a savory depth, mix in some kelp powder or dried anchovy powder. If you’re using a store-bought pancake mix or tempura flour, these often already contain seasoning and flavorings, so you can skip adding extra salt or powders.

Now, heat a pan over medium heat and add a generous amount of cooking oil. Once the oil is shimmering and hot, scoop portions of the batter onto the pan and spread them out thinly into round shapes. Spreading them thinly will help them cook through evenly and achieve a good texture.

Reduce the heat to medium-low. Once the edges of the pancake look golden brown and the surface starts to set, carefully flip it over. Cook the other side until it’s also golden brown and crispy. This ensures your delicious shredded radish pancake is perfectly cooked.

These freshly made, warm radish pancakes are delicious on their own, but they are even better with a dipping sauce. Try a simple mixture of soy sauce, vinegar, and a touch of sugar. Alternatively, you can use the leftover brine from making radish salad, or even pickle juice mixed with a little vinegar for a tangy accompaniment.
