Delicious fresh potatoes are abundant these days! While steamed potatoes are wonderful on their own, this time I’ll show you how to make special seaweed potato fries that are incredibly tasty even without ketchup. They’re perfect as a snack for kids or an accompaniment to beer!

Ingredients

  • 2 medium-sized potatoes
  • 100g potato starch
  • 2 cups cooking oil (for frying)
  • 1/2 tsp salt (or to taste)
  • 1 sheet of roasted laver (gim) or purple laver (gim)

First, prepare two delicious, medium-sized fresh potatoes. Wash them thoroughly under running water to remove any dirt. Then, dice them into small cubes, about 1.5cm in size. Cutting them into smaller pieces helps them cook evenly without absorbing too much oil during frying.

Lightly pat the diced potatoes dry with a paper towel. Place the potato starch (100g) in a bowl and add the diced potatoes. Gently toss them to coat evenly with the starch. You don’t need to pre-soak the potatoes to remove starch; coating them directly works wonderfully for extra crispiness after frying.

Heat about 2 cups of cooking oil in a deep pan or wok over medium heat. Once the oil reaches approximately 170°C (340°F), carefully add the starch-coated potato cubes one by one. These diced potatoes fry up quickly without becoming overly greasy, thanks to their surface area. Fry them for about 5-7 minutes until they turn golden brown and crispy.

Once fried to a perfect crisp, transfer the potato fries to a wire rack or a sieve to drain off any excess oil. This step is crucial for maintaining their delightful crunchiness and preventing them from becoming soggy.

Now, it’s time to season the drained potato fries. Sprinkle 1/2 teaspoon of salt evenly over them, or adjust the amount according to your preference. For an added layer of flavor, you could also use seasoned salt or a salt blend with herbs.

The basic potato fries are now complete! They are already delicious, but there’s one more secret ingredient that will elevate their flavor even further.

That secret is crumbled seaweed! Take one sheet of laver or purple laver, lightly toast it on a dry pan until crispy, then crumble it finely with your hands or cut it into small pieces with scissors. Sprinkle the crumbled seaweed generously over the potato fries. The savory and slightly salty notes of the seaweed create a unique flavor that makes these seaweed potato fries irresistible, even without ketchup. Serve them immediately while they’re warm for the best experience!
