How to Make Refreshing Seaweed and Corn Fritters
Seaweed is in season right now, and it’s widely available at the market for a great price. I bought a can of sweet corn to make these delicious fritters with the seaweed.
Ingredients- 1 portion of dried seaweed (like gim or nori, about 20-30g)
- 1/2 can of sweet corn kernels (drained)
- 1 red chili pepper (deseeded and finely chopped)
- 1.5 cups of all-purpose flour mix for pancakes (buchim garu)
- 1 cup of water
- Cooking oil, as needed

Step 1
First, let’s prepare the batter for our delicious seaweed and corn fritters. In a bowl, combine 1.5 cups of pancake flour mix with 1 cup of water. Whisk until smooth, ensuring there are no lumps. Aim for a consistency that is neither too thick nor too thin; it should flow smoothly when lifted with a spoon.

Now, add the prepared seaweed and drained sweet corn kernels to the batter and mix them thoroughly. Rinse the seaweed well and cut it into bite-sized pieces (about 2-3 cm). It’s crucial to drain the corn kernels completely to prevent the fritters from becoming soggy. Don’t be shy with the corn; adding plenty will make each bite burst with sweetness!

Heat a generous amount of cooking oil in a frying pan over medium-low heat. Ladle portions of the batter into the pan to create fritters of your desired size.
