Easy and Delicious Seasoned Soybean Sprouts Recipe with Carrots

Main Ingredients for Seasoned Soybean Sprouts
- 202g soybean sprouts
- 37g carrot
- 1 Tbsp chopped green onion
- 0.3 Tbsp minced garlic
- 1.4 Tbsp fish sauce (or tuna extract)
- 1 Tbsp sesame oil
- 1-2 pinches salt (to taste)
- Sesame seeds for garnish
For Blanching Soybean Sprouts
- 1.7 liters water
- 1.7 liters water
Cooking Instructions
Step 1
Place the soybean sprouts in a large bowl and fill it with enough water to cover them. Gently swish the sprouts with your hands and rinse them about 3-4 times, changing the water each time, to remove any dirt or debris.
Step 2
Transfer the cleaned soybean sprouts to a colander and let them drain thoroughly. Proper draining is key to allowing the seasoning to be absorbed well, resulting in a delicious dish.
Step 3
Prepare the additional ingredients. Measure out 0.3 Tbsp of minced garlic. Finely chop the green onion. Thinly julienne the carrot into about 3mm thick strips.
Step 4
In a pot, add 1.7 liters of water and bring it to a boil over high heat. Once the water is boiling vigorously, add all the prepared soybean sprouts and stir them gently. It’s best to leave the lid off at this stage to help eliminate any fishy odor.
Step 5
Once the water returns to a boil after adding the soybean sprouts, add the julienned carrots and stir them in.
Step 6
As soon as the water boils again after adding the carrots, turn off the heat immediately. Overcooking the soybean sprouts and carrots will make them mushy and lose their crispness. Blanch them for only about 1 minute 30 seconds to 2 minutes over high heat for a perfectly crisp texture!
Step 7
Quickly pour the blanched soybean sprouts and carrots into a colander to drain. Rinse them under cold running water to cool them down. Gently press them with your hands to remove excess water. Be careful not to squeeze too hard, as this can break the sprouts.
Step 8
Place the drained soybean sprouts and carrots into a bowl. Add the minced garlic and chopped green onion.
Step 9
Add the seasoning. Pour in 1.4 Tbsp of fish sauce for a rich umami flavor. (If you don’t have fish sauce, you can substitute with soy sauce or a different kind of fish sauce.)
Step 10
Add 1 Tbsp of sesame oil for a nutty aroma and flavor.

Finally, sprinkle in some sesame seeds.

Put on disposable gloves and gently toss the ingredients together, being careful not to crush the sprouts. Mix until all the seasonings are evenly distributed. Preserving the crunch of the soybean sprouts is key!

Taste the mixture. If it feels a little bland, add 1-2 pinches of salt and mix again lightly to adjust the seasoning to your preference.
