Main Ingredients- 1 large kohlrabi
- 1 large onion
- 1 small daikon radish
- 5 cucumbers
- 5 Cheongyang peppers (Korean chili peppers)
- 1 Tbsp pickling spice
Brine- 1 cup soy sauce
- 2.5 cups brown rice vinegar
- 2 cups sugar
- 6 cups water
- 1 cup soy sauce

Cooking Instructions
Step 1
Prepare the daikon radish, onion, kohlrabi, and cucumbers for pickling. Wash each vegetable thoroughly.
Step 2
Cut the kohlrabi and daikon radish into pieces about 2 cm long and of similar thickness. Slice the cucumbers into quarters lengthwise, then cut them into lengths similar to the daikon. Dice the onion into bite-sized pieces, and finely chop the Cheongyang peppers into about 0.5 cm slices.

Combine all the prepared vegetables in a large bowl or container and mix them evenly, ensuring they are well distributed.

In a pot, combine soy sauce, brown rice vinegar, sugar, and water to create the pickling brine. Once it starts boiling, add the pickling spice and stir well. (Feel free to adjust the amount of sugar and vinegar to your personal preference.)

Bring the prepared brine to a rolling boil over high heat and let it simmer for 2-3 minutes. Boiling it thoroughly helps maintain the crispness of the vegetables.

Carefully pour the hot, boiling brine over the prepared vegetables. Don’t worry about the vegetables cooking; the hot brine actually helps to preserve their crunchiness by slightly firming them up. Pour with caution due to the high temperature. After pouring, gently stir the mixture once or twice. Allow the pickles to cool completely, then refrigerate for 1-2 days to let them pickle.
