Ingredients
- 70g pancake mix
- 30g tempura flour
- 100ml cold water
- 130g fresh chives
- 1 squid, cleaned
- 1/2 onion
- 30g carrot
- 1 egg
- 1 Tbsp anchovy sauce
- Generous amount of cooking oil
Cooking Instructions
Step 1
First, let’s make the batter for your delicious chive pancake. In a large bowl, measure and add 70g of pancake mix and 30g of tempura flour. Using tempura flour will give you an extra crispy texture. Crack in 1 egg.

Now, pour in 100ml of cold water. Use a whisk or spoon to mix it, ensuring there are no lumps, to achieve a smooth consistency that’s neither too thick nor too thin. Mixing with chopsticks can help you better control the batter’s thickness.

Add 1 Tbsp of anchovy sauce to the batter for a savory umami flavor and mix gently. You can substitute with soy sauce or salt if you prefer. Taste and adjust the seasoning according to your preference.

Wash the chives thoroughly, pat them dry, and cut them into approximately 5cm lengths. Cutting them too short can cause them to fall apart while cooking, so aim for a moderate size.

Prepare the vegetables that will add flavor to your chive pancake. Thinly slice 1/2 onion and julienne 30g of carrot to a similar thickness. Clean and cut 1 squid into bite-sized pieces (about 1-1.5cm). If they are too small, you might lose the satisfying chew.

Combine the prepared chives, julienned onion and carrot, and the cut squid in the batter bowl. Gently mix everything together so that the ingredients are well incorporated into the batter.

Now it’s time to cook the chive pancake. Heat a frying pan over medium heat, then add a generous amount of cooking oil. Swirl the pan to ensure the oil coats the entire surface. Ladle a portion of the batter onto the pan and spread it thinly. Spreading it thinly will help it cook up extra crispy.
